Happy Tuesday! This past weekend I was finally able to begin trying out recipes I have pinned on Pinterest. I kept it pretty simple this weekend as we were super busy. The first recipe I wanted to try was this yummy looking Fruit Salad with Honey Lime Dressing. I really like how this sweetened up the blueberries so that they didn’t taste too tart.
Ingredients:1 pt strawberries 1pt blueberries 1 bunch green grapes 1 bunch red grapes
Honey-Lime Dressing:1/4 cup honey Juice from 2 limes
Wash all the fruit and pat gently to dry. Cut strawberries in half and discard stems. I ended up cutting mine in quarters to make them bite size. Remove stems from grapes and put all the fruit in a large bowl or pan. (I bought twice the amount of fruit and the divided it in half just in case some didn’t like the dressing on it.)
In a measuring cup add the honey and juice from limes. I ended up only using juice from one lime as I didn’t want it too citrusy. Pour over the fruit and gently stir. I found it easier to just use my hands to thoroughly cover the fruit.
Refrigerate until ready to serve.
I took this recipe one step further. I put it on top of pound cake and cool whip to make my own “Fruit Salad Shortcake.”
It was delish! As you can see, the kids and hubby loved it as well, it was nearly gone in just one day!
